The elegant sake flavor is reminiscent of a sweet flower. The flavor is rich, but it disappears in a breath when you swallow down the sake, like a fairy. “Sakunohana spec d” is one of the greatest sakes brewed by Sakunohana shuzo. It has rich flower-like flavor and a clear after taste.

“Spec d” is the code name of Nagano kobo D, which was a sake yeast developed by Nagano Prefecture General Industrial Technology Center in 2006. Sakunohana shuzo has been making sake with Nagano kobo since it was developed.

“Sakunohana spec d” is a junmai ginjo sake. Junmai sake is made of only rice, water and yeast, no distilled alcohol added. Sakunohana bottles only junmai and spec d sake in a blue bottle.

The ingredient rice is “Hitogokochi”, it is the local sake rice in Nagano prefecture. Sakunohana shuzo was established in 1892. Since then, they have kept their own rice fields. There are few sake breweries which have their own rice fields.

Mr. Takahashi, the president of Sakunohana shuzo has been sticking to the basics of brewing sake. He says, “Keep the basics with rationalized methods, it is the best way to make fine sake.”

Mr. Takahashi said “By drinking our sake, I hope more people will become interested in the Japanese rice culture.” Sakunohana spec d complements authentic Japanese dishes. You can enjoy Japanese food much more with this sake.

“Yuri” means “lily” in Japan, and it is the name of the brewer of this sake.
A female brewer HAYASHI Yuri and her mother Keiko make this sake. They have made sake for nearly 20 years.
This sake was developed 10 years ago. Since then, the sake has built up fans not only women but men. Its clear finish and elegant flavor are popular among sake maven.

There are 2 types of sake.; Junmai daiginjo and junmai ginjo. The daiginjo is more tasty, I recommend you choose that one.

The sake is of course good chilled, but some people drink it warmed a little. The sake has a mild taste, so you can enjoy it your way.

When you open this Dassai bottle, a brilliant sake aroma is released that makes you feel happy…It needs no explanation about its delight.

The sake is classified as Junmai daiginjo. “Junmai” means “made of only rice and water, contains no additives.” “Daiginjo” means “the raw material rice is polished off by 50% or more.” In general, the more a rice is polished off, the finer taste a sake gets so it costs a lot to make daiginjo but its taste is worth the cost.


In addition, the sake is separated from the lees using a centrifugation technique. The centrifugation technique separates the sake without excess pressure, so it can maintain a delicate flavor of sake.

Dogo, Matsuyama city Ehime, is the place where the great Haiku artist, TANEDA Santoka, died. He loved sake deeply, the sake is essential to talk about Santoka.

Minakuchi sake brewery. It is a long established sake brewery in Matsuyama.

The sake named from a line of Santoka’s diary. “Ichiyoku Ippai” means “Every time I take a bath, I have a drink.” Santoka loved warmed sake very much, so they developed a good sake to drink warm. It has a refreshing flavor. It is good to drink warm of course, but cold is also good. The taste of this sake is so elegant that you can’t believe it is sold for such a low price.

I recommend it as the sake which you can relax and enjoy. It is suitable for sake beginners.

Dogo bakushu kan is a beer hall next to Dogo Onsen. It serves three kinds of local beers named “Dogo beer”.

Japanese beers are sometimes said that they are too sweet. But most of Japanese local beers are refreshing and dry. Some of Japanese beer manufacturers seems to provide sweet beers in US. But such sweet beers are not sold in Japan. I think the sweet beers are made for foreign countries specially.

Dogo beer is made by Minakuchi Shuzo. Minakuchi Shuzo is a long established sake brewery with 200 years, and the owner of Dogo Bakushu Kan.

staut and alt beer

There is three kinds of Dogo beers.: Koelsch type, Alt, Stout. They don’t have any unusual qualities, easy to drink for person who doesn’t like beer.

Beers are always served chilled in Japan. There is so hot and humid in summer, the cold beers are prefered very much. Dogo bakushu kan also serves tasty cold beers.
You will get addicted to the cold beer if you drink it after taking a bath.

Tai-meshi

Dogo Bakushu kan also serves good dishes. “Tai-meshi” is popular, that is a rice bowl dish with sashimi of sea bream and a raw egg. It is local food of Uwajima, where is well known for good fishes. Try this with beers.
